Catherine Butler is 5th Generation owner of Hugh Phillips Gower Butchers established in 1878. She is the great-granddaughter of the founder and the only woman in Wales to own abattoir and hold a slaughtering licence, making her highly successful in a traditionally man’s world.

Sourcing starts at the root and working with local farmers, Catherine knows the animals’ source, breed, how they are reared and what they are fed. Most importantly, low food miles are of paramount importance as she believes it is vital that the animals don’t travel very far from the farms to the abattoir.

Such is Catherine’s reputation within the industry, that last year she was invited by HCC to deliver a butchery demonstration at the Royal Welsh Show.

Catherine’s team provide customers with Welsh produce, hand-selected from local farms, processed in the abattoir and sold at their shop in the award-winning Swansea Market, working by the mantra ‘gate to plate’ with all industry protected, geographic indication standards.
